at Sorensen Cellars
The 2007 crush was another successful vintage for Washington State and Sorensen Cellars. All wines have finished malolactic fermentation, have been racked, and barreled.
With spring approaching it is time to once again rack previous vintages and perform what seems like the never ending task of topping barrels. Where does all of that wine go? Time to bottle up new vintages and prepare for the “Spring Release”.
We have some new offerings for this Spring. First will be a new red, a blend of 50% Cabernet Sauvignon and 50% Merlot from Whitestone Vineyard which lies way north in the Columbia Valley Appellation. A cooler sight, this vineyards fruit exhibits rich intense colors with higher acids. It will be priced in the $15.00 per bottle range. Watch for release in April.
At Red Wine and Chocolates Tour, we will be introducing our new 2004 Ciel du Cheval Cabernet Franc, always a favorite among red wine drinkers. Then later in May we will offer a new varietal for Sorensen, our 2007 Viognier. The grapes for this fruity wine were sourced from Two Coyote Vineyard located in Zillah, the new Rattlesnake Hills Appellation.
Sorensen Cellars will be participating in a new event in late Spring. Watch our web site for an announcement.
And coming June 1st, our tasting room will be open seven days a week through August. So make time for a get away and come out to Port Townsend for a winery visit and enjoy great scenery, food, wine, and vistas in our Victorian Seaport city.
